From Frozen: Steak and Rice Stir Fry

This is a great recipe, and is one that I make many variations on for lunch. It's a really balanced meal, with green veggies, protein and a healthy grain. One of the reasons that I make it so often is how easy it is to make!!

This recipe makes 2 generous portions, and is easily doubled to accommodate more eaters.

This is another "From Frozen" recipe, and doesn't take much time to make at all! It is also a great dish to bring to-go for work, school, or to have ready-made in the fridge.


Steak and Rice Stir Fry







Ingredients:
1 tsp oil (butter, coconut, olive, whatever you choose)
5 ounces frozen steak strips, precooked (I freeze it myself, but for this recipe I used Tyson Steak Strips brand)
1 cup frozen broccoli florets (or broccoli cuts)
1/2 cup frozen kale
1/2 -1 cup of hot water (You can substitute for broth, if you choose)
1 cup brown rice, precooked (I use Trader Joes microwavable organic brown rice)

Seasonings:
1 tbsp Mrs Dash Garlic and Herb Blend (LOVE this mixture, if you don't' have it available use your own blend of seasonings -- at the bottom I'll post the ingredients in Mrs Dash)
1 tbsp red pepper flake (optional)
1 tbsp chili powder
1 tbsp adobo (If you aren't using this, use 1/2 tbsp salt instead -- I am using this in place of salt)
1/2 tbsp black pepper


Times:
Prep: 5 minutes
Cook: 12 -17 minutes 

Servings: 2 portions

Instructions:

Add 1/2 cup of hot water to your skillet over medium heat, bringing it to a light simmer. Add and mix your seasonings into simmering water, stirring it together for about 30 seconds. This gives a chance for those pepper flakes, and other seasonings to warm up and distribute their flavor through the dish.

Immediately add all of your frozen veggies and steak, stir, and put a lid on the skillet. Allow the steak and veggies to cooking for 7-10 minutes, stirring every 3 minutes or so while checking water level. There should just be enough liquid to coat the bottom of the pan.


If water level depletes, add the remainder of your hot water. After the steak and veggies have cooked through, add your precooked rice to the mix, giving it a stir and cooking for 3-5 minutes allowing the remaining water in the bottom of the pan to cook out.


Your done! Give a final taste test to adjust seasonings as you desire, and enjoy!!

Suggestive dips/sauces if your interested!! Depending on our mood, sometimes we have this meal with a different sauce to give it additional zing!!
